I have to give a hearty Thank you to Jordan Kube and the others who contributed to the Knock off discussion in late October.

Since learning to torch the punty to be sure it is hot if not moving and the small drop of water & again at 180 my punty breaks have been flawless compared to the crappy breaks I used to get.

No more hitting it multiple times and no more big bites out of the bottom. I have spent way too many years fighting for a better punty break, always assuming I was either too hot going on or whatever. Its as though I have been handed the secret key to great punty breaks...just a small tap with the back of a butter knife and its off clean.

This is especially important for bigger or longer pieces where the heat is definitely less at the base.
